The Hachibachi[]
- 45ml (1.5oz) St Germain
- 105ml (3.5oz) Prosecco Frizzante or other semi-sweet semi-sparkling white wine
- 1/2 tsp egg replacer powder, or 3/4 tbsp egg white, or equivalent aquafaba/Fee Foam
- 1/8 tsp edible gold shimmer powder
Combine ingredients in a shaker with solid ice. Shake and strain through a hawthorn into a chilled coupe. Leave to allow foam to settle and any ice chips to melt.
Garnish with finely crushed honeycomb and a peeled white grape.
This is a pretty sweet drink and like all Prosecco drinks it will sneak up on you. If you find the elderflower too dominant you can drop the St Germain a little or up the Prosecco. Too sweet? Switch to a Brut Prosecco.
